i've been loving parsnips (and turnips) this year. and squash. i always love fall squash...
I know, I love fall vegetables! I'm going to try mashing the parsnips with potatoes - we'll see how that goes. Should be tasty. And squash is always such a delicious reminder of fall. I've also been obsessed with cooking with apples lately - and not just in desserts.
I was just tuning in to ask how you cooked the parsnips! I have only ever used them in a vegan pot pie recipe (as seen on my blog; check it out). I'd love new ideas--let us know how the mashed potato/parsnips go.
i've mashed them w/ turnips, which was delish, but i've also sauteed them and added them to sauce and used them in soup. they're quite versatile!
